1. dry salt marinade: ½cup of salt and a tablespoon of brown sugar, mix the salt and brown sugar and spread evenly over the surface and cavity of the turkey, then place in the refrigerator for at least 12 hours, preferably 2 days.
2. Room temperature rewarming: Remove the turkey from the refrigerator and let it sit for 2-3 hours to rewarm.
3. Butter: Separate the skin from the breast with your fingers and spread 50g of softened butter under the skin of the turkey and in the middle layer of the breast. Spread another 50g of butter over the top of the turkey.
4. Roast: Preheat the oven to 450°F. Place the turkey in a roasting pan and fill the bottom of the pan with some water. Roast for about 15 minutes rotating the baking sheet 180 degrees back and forth and roasting for another 15 minutes.
5. 4 While proceeding prepare the honey sauce: Bring 1/4 cup sherry vinegar, 2 tbsp honey, 4 tsp Worcestershire sauce, 3 sprigs of fresh rosemary, three cloves of garlic, the zest of two fresh oranges, and 4 tbsp unsalted butter to a boil, then keep warm and set aside.
6. brush with honey and continue roasting: reduce the oven temperature to 300°F and brush the turkey with honey every 30 minutes until the internal temperature reaches 150°F. I roasted it for about an hour and a half before it was done.
7. let stand: after roasting, let stand for 30 minutes to 1 hour before slicing and enjoying to ensure juices are locked in!
