Saw it at my local supermarket. Is this cheese good?

    Yes, it’s delicious. It’s much softer and milder than aged Asiago, it’s a wonderful table cheese.

    Would it go bad that quickly? I don’t think I could use that much cheese before it got moldy…

  3. Italian cheeses made from raw milk and pressed paste actually go moldy very quickly… but superb cheese in any case

And I have just read that it is an enhanced cheese, which corresponds exactly to the AOP designation in France: protected designation of origin, normally it should be good I think even if I don’t know where it comes from or what country it would seem Italian to me personally even if it could be made elsewhere…

    Asiago is a great type of cheese, but like any other variety, differs from maker to maker. Some I like, others not so much.

    It’s good if you have a lot going on and don’t want to used aged versions. But this will spoil faster something to keep in mind

    Asiago is delicious, and unpasteurized cheeses are very flavourful. But they do go bad quickly, so it should probably live in the freezer, hard and medium firm cheeses freeze very well. Butter does too
