One of the cheese guys at my local Whole Foods saw me last week and told me that I need to try this Rush Creek Reserve, the only other cheese apart from Pleasant Ridge (which I love and just got another wedge today to make sandwich with blueberry compote), and he told me about all the stories of this remarkable producer Uplands Cheese. Instantaneously sold and brought home a whole wheel, let it sit at room temp for ~20min and oh boy it’s creamy and smooth like cultured butter, but so much more subtle and flavorful. Wrapped in spruce bark, it’s advised to be eaten after removing the upper layer of the rind, but that sounds like a terrible waste to me and I ate it all. Putting it on a piece of sourdough toast resulted in the wonder shown in the first picture.
This is gonna a very unpopular take and might get me into trouble, but I like this cheese more than Harbison (I’m a big JHF fan! But this is just a master piece). Very seasonal and very limited, if you see it please do yourself a favor and get some. If not maybe try nagging the cheese person/order writers at your grocery store to get some…
