Rick Bayless chicken tinga tacos

[originally linked to his website, but that got removed. Then the YouTube recipe got removed. It's easy to find, though]

Made a quesadilla after with Oaxaca cheese mixed with the tinga. Just a bit of oil in a skillet, flour tortilla, and a bit of finishing salt.
