    How is it? They’re selling skate at my grocery store but I’ve never cooked it before.

    Whats the texture like? Do you notice the separate strands or does it flake together as you chew it?

  5. Skate is my favorite fish to eat. Beautiful filet! Salsa verde sounds like a nice sauce for it, I usually just do lemon and a little brown butter.

    When I was a kid, skate was the cheapest fish at the counter ($2.99/lb IIRC). I think they just thought of it as a trash fish, but I loved it. We ate it all the time.

    I’m glad it’s getting the respect it deserves, but seeing it move up to “specialty food” prices still gives me angst.
