I don’t need to preach to this crowd how amazing it is to find a Willoughby on its best by date, so I’m just here to share my happiness of 1) having someone hold on to the cheese until it’s ripe because too often I’ve let my impatience win over me and dig into my cheese knowing it’s not yet at its full maturity, and 2) having it on 50% off.
I still remember that this was my first Jasper Hills Farm cheese and ever since then I’ve failed repeatedly and gladly at not giving them my money. Gooey in the center, meaty (the description says “roast beef” and it’s real), buttery. So balanced and multidimensional in flavor. Cheers!
