[Homemade] Pork ‘n’ Beans

  1. Hey gang,

    It’s getting cold and wet in my neck of the woods. It’s time for braised dishes. “Put some meat in your bones” type food.

    Braised a pork butt in some apple cider, white wine and stock. All sorts of aromatics.

    Sautéed some shallots and garlic. A little white miso for umami. Deglazed with the braising liquor.

    A simple pesto/salsa verde with basil, scallion, anchovy, walnut and garlic. Olive oil, lemon and a dash of champagne vinegar.

    Topped with a few very lightly pickled onions.

    That’ll do it! Just some good hearty pork n beans! My way.
