Braised a pork butt in some apple cider, white wine and stock. All sorts of aromatics. Sautéed some shallots and garlic. A little white miso for umami. Deglazed with the braising liquor. A simple pesto/salsa verde with basil, scallion, anchovy, walnut and garlic. Olive oil, lemon and a dash of champagne vinegar. Topped with a few very lightly pickled onions. That’ll do it! Just some good hearty pork n beans! My way. Cheers!
