  1. I saw a whole rump cap at Woolies and just had to try it. I used salt only, scored the fat cap, then hung it on skewers in my drum smoker over coals with a water pan underneath. I made it into simple soft tacos with a store bought queso dip (though I should have made a chimichurri instead, that was an unforced error). Still, probably the best thing I’ve ever made on my smoker.
