Carrot puree is still the bane of my existence, this was boiled in salted water for 15min, ran through my food processor 2 times (1 min cycles) with some of the cooking liquid and butter, and pushed through a fine mesh sieve and it still comes out looking grainy. It tasted fine and didn’t feel grainy but I haven’t been able to get them looking as smooth as I’d like.
Also, not sure how I feel about my carrot ‘roses’, I think bigger carrots to start would’ve helped.

Looks great. Adding more carrot flowers sprinkled across the plate would really punch up the visual of the dish, and help break up the negative space.

I don’t know if you intended this but the puree looks like it was piped out in a carrot shape and I really liked that as a subtle, whimsical addition to the plate.

I don’t really understand the dish conceptually. I think it needs more, maybe something colorful, maybe something saucy, maybe its a new texture.
i dont know, all I know is that it gets me 90% of the way, but it needs that last 10% push to get it over the line

Very nice, I like the carrot roses – I have not seen that before. Can I ask where you got the plate from?

I agree with a lot of the puree ideas. Cook low and slow for the carrots until they almost just fall apart when you grab them, if you have them in boiling water they’ll almost shred themselves while they cook. Blender over food processor every time, you can add them in by themselves (dry), slowly drizzle in the Carrot water or cream until the desired consistency. Go low on the blender when adding the water, when they start moving buzz the hell out. Wish you luck! The plate looks great over all though!

Looks really good, I would add something like some roasted vine tomatoes maybe a vine of 5, or some sautéed brocolli/asparagus? Honestly looks delicious, clean, great job.
