  3. I’m really curious about that tuna. As someone who used to drink shittons of soju for years, I can tell you it’s cheap and not dissimilar to vodka in taste. What is the curing process of that tuna with soju? What is the end result?

    Also that plating looks dope, even the bowl, I would just get rid of the palm cutout and replace with anything, maybe finely shaved/curled, I don’t know. It’s kinda cheesy and ruins that really nice vibe you’ve got going on.
