Love it. Would never think to serve fish this way. Looks gorgeous, looks like what it is, and you manage to get a bunch of things going on without looking busy at all. I’m pretty critical and generally always have something in dislike. Not here. A+.

I’ve never seen fish sliced like that, not necessarily a bad thing, honestly. I woulda sliced it at an angle or not at all but honestly still looks quite nice, the EVO in the Leche looks nice, maybe add another oil for a bit more color. And some micros never hurt. Great job
