    It’s not really a bone in pork chop. Every time I see a sliced piece of meat, my first thought is how dry it’s going to be. I know it makes for a prettier plate, but there are ways to serve it intact without slicing it. And there’s always a bit of a thrill when you get a bone-in piece of meat…a caveman thrill. It needs something green and fresh. Mostly, it looks really good. Anyone would be happy to have that placed in front of them at a dinner party.

    It’s a little hidden by the meat. I’ve revisited this post 3 times before I noticed the sauce.

    I also agree about risking the meat drying out after cutting. When you say bone-in, there’s a caveman thing that’s expected.

    Frankly these are my kinda flavors and I’d smash this in a heartbeat. Some chimmichurri for color and flavor might be nice.

  3. This would be nice on a black or dark blue ceramic plate. Maybe Canarian sauce mojo verde garnish over the top, microgreens. Not sure how to elevate it further.

    To be honest it looks really good already.

  4. Love it. Love the simplicity. Agreed it needs a dash of color, maybe some green, cilantro, parsley, scallions, etc.

    I’d be delighted to be served this.
