  3. This legit is a 9.9999999/10 fish flake obscuring a bit of the coulis. I’d have said it’s perfect but…taunt the critics, they’ll critique.

    On an actual note, if I was presented that at one of my bucket list restaurants, that’s what I’d expect. Fucking kudos. Your tag says culinary student? Fuck me running, this is a beaut.

    Do you mind if i inquire how you achieved the sear? It looks torched to me. Of that is the case, does the butane flavour the fish? I’m kinda sensitive to that. Otherwise, beautiful plating and sear 🙂 bravo

    My only nuance that’d bother me is that marking at the top of the plate near the run away pea also at the top of the plate

    Just wondering, are peas back in style? I’ve seen a lot of plates with peas in the last bit here. I always thought peas were considered too old school.
