  1. Looks great. Did you pass the purée? I don’t know what you want but I think you could go smoother. I also think the salad looks so good on its own that you don’t need the micros. Edit: my last suggestion would just be to not have the fish completely perpendicular to the direction you’ve plated the salad in. Just some thought though, I’d eat it in a heartbeat!

This looks absolutely glorious. And no. You didn’t go too far on the purée. It sounds lovely.

I dunno, don’t hate on yourself, puree looks fine to me, filling up the bottom of the plate. Amazing on every level, the picture is a cookbook cover. And based on your ingredients you’re hitting every note. Just brilliant!

  4. If it were polenta instead of corn (same same but different) then you’d be fine with that plating

  5. nice bit of salad, nice bit of fish, nice bit of sauce. nicely presented. id say it would look even better without the microgreens to be fully honest.

Humm.salmon is cooked perfectly, not too sure if your goal is to create corn porridge.Your puree too chunky therefore it’s not a finer finish,it could use a bit of nutmeg and butter to give it some essence.seems you might have had a good season on the tomato farm, way to many cherry tomatoes I’m your salad, nice touch on the parsely

  7. Damn this sub is KILLIN IT today!! I ain’t even trippin about the purée! Nice work!!
