I wish I had the time to chunk them as a monger. But I have to split the wheel into quarters and then to the wire. Those chunks are so much more aesthetic.
I’m gonna have the “hot take” here, I guess, but I can only stand small amounts of Parmesan like this. We used to occasionally do a parm wheel pasta at the place I work, and the smell is overpowering. 😭🤣

Its so satisfying breaking a cheese out of the rind, just came back from Europe and all the cheese I ate there was exquisite!
Getting pieces as uniform as possible on this “rustic cut” always makes me feel so powerful.

I worked for a few years at Wegman’s and it was my job every Sunday to crack open and portion two wheels of the good stuff. Nothing beats the smell when a wheel opens, along with the taste of the innermost little nuggets of parm.
