I love this cheese so much and go through a block every 20days or so. I’ve eaten slices for every meal of the day before and several times as a midnight snack before bed. And yes, I do eat it over the sink like a rat

    This cheese isn’t specific to your shop, I’d add. Coastal cheddar is available in various places, what makes it special is that it’s specifically from the region where real cheddar actually comes from.

  6. I put a few thin shaving on my egg each morning, it’s so flavorful that you need very little.

  7. This stuff is the best. I buy it and keep it refrigerated in the packaging for about 3 months before I break it open. It builds up calcium lactate crystals and gets even better. Weird? Maybe…but it sure works.

    I don’t know what you call it, but I’ve read about it in other places. The cheese naturally forms these salt crystals.

    You cut these crumbly loaves and bite into the pieces and there is that tasty, satisfying “crunch” when you hit those.

    This cheese, some canned fish (oysters, calamari or sardines) with some triscuits and a sliced apple are the BOMB!

  10. I’ve never had this cheese but would anyone say it’s similar to Snowdonia Black Bomber? Those have crystals and I crave that cheese but it’s so expensive. Wondering if I could find a cheaper alternative in this one.
