What’s the other purée on the plate? I see parsnip, but what’s the darker one?

Skin needs bettering rendering, and I can’t tell if it’s the gastrique being super runny or the duck not having rested long enough, but that needs to get fixed.

I think it looks a bit too clumped together. Get a bigger plate, or one that isn’t curved around the edges so you can spread out to the edges a bit more?
