Have you tried using a peeler with the melon? Can make little flowers or rolls with those peeled pieces. Goes nice in salads like these.

Gorgeous plating.
The only thing that stands out to me is that you called it āprosciutto and melon,ābut neither ingredient is the focal point of the dish.
Everything on the plate is equally represented. For your next iteration, I would consider how you can highlight the primary ingredients.
Flavor wise, Iām not too sure how the mint works with the meat. Itās delicious with the melon or cucumber. This goes back to my earlier point. If I didnāt know better, I would eat this plate like a salad and I donāt think that is your intention.

I could not recognize the fennel herb because i mistook it for something else. I assume this sub would want people to know but I havenāt seen many people use the herb rather than those little seeds or bulbs
