  1. Lay the white asparagus like an X. Offset middle of the plate. Then get some height with the fish leaning on it. Place veggie mix similar to this. Can also use some to hold up fish for more height. Beurre blanc poured over some of the fish, some runs off on the plate. Making for nice contrast of colors. If that sauce is served table side even better. That’s just my critique I love this plating however.
