  1. The water on the plate is unappetizing. Your sauce is messy, and your parsley is bruised. The ratatouille itself is arranged nicely but looks loke it might be a bit overcooked. Try plating directly on top of a small bed of sauce in a rimmed bowl, perhaps with a ring of chice oil around the orange sauce. Ditch the 2-inch single chive, and substitute some nice micro greens.
