Super light lemongrass cake, Coconut cloud mousse, Blackcurrant foam, Blackcurrants macerated in gin, Puffed rice and Toasted coconut crunch.

The foam is sort of covering everything right now. In my opinion, that coconut cloud mousse is the best looking thing, so make that the star of your plate and think about how the rest of the ingredients can be strewn around it to highlight colors and textures. Maybe tearing the cake into pieces instead of the mousse sitting on it. Just a thought. Sounds great, though.
