This bowl is incredibly tasty and filling and so easy to make – just combine the ingredient list in a large serving bowl! The core recipe is 278 cal per serving; and then I do add-ins. Most often, 1oz of feta (70 cal) for a total of 348 cal. Or sometimes I'll add in a 1/4c of a whole grain such as farro or wild rice (adds 50 calories give or take depending on grain; adjust accordingly).

  1. 1 Medium Avocado, cubed
  2. 1 can of chickpeas drained & rinsed
  3. 3 cups of steamed cauliflower, chopped
  4. 1/2c chopped red onion
  5. 1 cup cilantro
  6. 1 of those small cans of mild chopped green chiles (like Old El Paso)
  7. 3 TBS lemon juice

The total calorie count on this is 834. I get 3 servings out of it.
