I used gunpowder for this but I love roku as well and think it would work nicely also.

Beautiful. Recommendations would be smaller plate, cut the streusel base to be the same size as the mousse, and replace the mint with edible flowers.

The flavors sound very exciting! The middle section just looks like itโs lacking something, probably because itโs comparatively smaller and looser than the mousse and ice cream. Maybe just add more of the components, bulk it up a bit, call it a shareable dessert.
