    Not a fan of the choux Swan, entire plate feels like the worst gimmicks of the past 50 years of cooking. Choux swans, microwave sponge, gold leaf. Idk, try simplifying and focusing on flavour. Flavour and eating experience needs to come first.

  2. Hah…and as I have pareidolia, I missed the swan entirely (hate that swan thing anyway) and only saw a little brown octopus looking up at his tenticle waving from behind kelp. I thought it was a cute kid’s plate.

  4. I love the swan. Two of them facing eachother drizzled with choclate on a raspberry syrup heart would make a nice Valentine dessert.

  5. Looks like a early modernist painter going through a brown phase or like if a home in the mid 70’s was ransacked by burglars, all brown and tan furniture trashed everywhere. It sounds inedibly sweet. Can hardly see the gold leaf as there is no contrasting colours.
