    Looks amazing but on a closer look it seems like farmed salmon. Why go to all that trouble and expense to put something this amazing together if the main component is subpar? Otherwise bravo.

  2. Use a bit of glycerol monostearate in your oil to thicken it

    And your caviar looks so dark, seems like black lumpfish ?

    I would pipe the mascarpone (looks a bit messy with the oil in the middle) but otherwise it’s beautiful and sounds delicious.

  4. Beautiful composition. I like the wetness on the plate as it adds another texture to drag through and a lovely pastel hint of the cucs and leaves
