


Soo if you ever feel like you need something to warm you up in between meals… egg drop soup is a great option. It’s also delicious. Pictured is my left over egg drop soup… I already ate most of it lol, but one serving is that bowl almost full (it’s a 2 cup bowl)
Recipe:
4 oz chicken – marinate with 1 tsp of cornstarch, 1 tablespoon of water, 1/2 tsp of oyster sauce (or just pinch of salt)
32 oz carton of Chicken stock
32 oz of water
2 can sweet corn (or frozen or fresh corn)
4 egg white
1/2 tsp turmeric powder (optional for color)
1/2 tsp sesame oil
1/2 tsp white pepper
Salt to taste (I put about 1 tsp)
A drizzle of soy sauce for umami
2 tablespoons spoon of cornstarch to thicken.
Bring the chicken stock and water to boil, blend the sweet corn part way (so not all smooth, or you can blend till smooth up to you). Add everything else except for the egg to the pot. Separate the egg yolk, and swirl the soup while you very very slowly pour the egg white into the soup. All done! Takes like 15 minutes really.
