That looks great man. But if i could just suggest one thing, the sauce drizzle doesn’t compliment due to your block plating. Large and small dots of sauce would give you more of an aesthetic look.

Lose the straight line of potatoes or use a side plate for them. I like the salmon omelette. Smoked salmon sounds delicious with this as well and could have a lox play to it if you added a little cream cheese to your omelette and made a nice bitter green salad with a citrus vin that has a lot of brightness.
I do like the way you have the salmon now as well, but my brain started running.

It’s very clever looking, but the two cylindrical things kind of look weird. Maybe the potatoes in a round mold? IDK, but it sounds fantastic!

If you’re going to shape the potatoes in a line, I would make it about the size of the omelet and make sure they are parallel on the plate.
I would *devour* this.

Looks like something that could *actually* provide some filling to an empty stomach, and the serving size is big enough to cover a good portion of the plate…unlike so much other stuff posted here.
