
I've been having a lot of these large, filling salads lately, mixing and matching protein and veg. I didn't realise grated cheese would be so nice in a salad! 🥗 🩷💚
Today's:
200g precooked chicken breast, 25g low fat (12%) grated cheese, 15ml buffalo sauce, chilies, cherry tomatoes, jarred capers and artichoke (drained), on a bed of mixed leaves with a drizzle of apple cider vinegar, sea salt and black pepper.
The other day I had some leftovers I turned into a salad in the same manner:
150g cooked salmon (lightly flaked into smaller pieces), 4 small potatoes quartered, capers, 1/2 bell pepper, 20g grated cheese, with a small bag of rocket (arugula) and some balsamic vinegar.
