Hello fellow North Sea chef! Love the use of brown shrimp, their flavour is awesome. Would it be an idea to add some light colors like slices of raw mushroom to make the petals pop and reduce the monotony of brownish colours?

This does not look appetizing in the least. It seems like there’s way too much shrimp on here and the arrangement looks like dirty shrimp cocktail. There’s something primal being triggered in me saying “this is gross; don’t eat”, even though it might taste good. Can’t put my finger on it.

If I were to describe this in one word it would be unsettling… I’m sure it’s delicious but I would have a hard time eating this without the shrimp stack reminding me of bugs

Lots of brown overpowering the dish, despite the use of different color on top.
Personally finding it unappealing as brown like that feels dirty. I’m sure it tastes great, but there’s something about the color and presentation that’s turning me off.
Try going for a more fresh look and utilizing some other color.

Interesting concept for a tartelette, but I think you need more restraint. If you lose the shrimp or replace it with a “shellfish” aioli you would achieve the result you’re looking for (accenting the wagyu I assume).

Go for bright, vibrant, fresh colors instead.
