Really pretty, but I would like to see the sauce more elegantly plated (more perfect shape or design), to be consistent with how beautiful the rest of the dish is. Nice work!

It’s overloaded and too “contrasty”. There’s really no need to try and cram everything including the kitchen sink on to one dish. THoughtful placement of a few key flavor and texture profiles will elevate and entice the senses far more than cramming everything in. Too my eye, this is too busy and too “top heavy” I don’t see how the “amond granola” compliments the other profiles, I would have used ground almonds to lightly dust the plum gel or orange cream, etc…etc..
