  1. Nice. I’d put just the tiniest bit of chive on each scallop, though, to further integrate them with what’s going on in the center.

    I think the plating could be a little more creative, it seems pretty simple, but that is a really fuckin nice sear on those scallops.

  3. So you made the mushrooms the central theme of the dish instead of the scallops? Interesting choice…not one I would have chosen, but interesting.
