  2. Why sunflower seeds? They look anemic and I feel like the taste wouldn’t work WHICH ISNT TO SAY OTHER THAN THIS IS LOVELY

  3. Now that’s peak culinary, using an ingredient in all sorts of ways for a single dish. Nice plating too!

    Interested in beet pickle broth gel. What’s in the broth apart from possibly duck and, well, pickle broth?

  4. This is in desperate need of some green.

    Add some light micro herbs or something and this will look x100 times better.

    It looks like your duck could use a little more sear and the beet looks a little too dark but I’d have to taste. Agree with what others say about the lack of green. Pepitas or maybe some pistachios or really crunchy snap peas or something? Oh here’s an idea, what about like a crunchy fried scallion?
