Here is your daily cheese facts: This cheese is made by Chaseholm Farm. A triple cream, soft ripened cow’s milk cheese with a bloomy rind out of the french tradition. Cave aged 6-8 weeks for a soft, rich pate through to center. For the uninitiated, the triple cream pairs 3 parts butter fat for every one part protein. Decadent, creamy and delicious. Pair with warm crusty baguette and libations. Wheels wrapped in breathable paper. Serve at room temperature.

This one is fucking amazing. We can barely keep it in stock at my shop.
It’s made by a creamery called Chaseholm Farms in the Hudson Valley. They also make a delicious cheese called Moonlight. Two of my fave soft cheeses for sure!
