We didn’t get the rouge river blue this year due to it having lesser quality this year than in the past.
Lamb chopper- sheep milk Gouda
Pleasant ridge- domestic “Beaufort” or Comte style (French mountain cheese style from Wisconsin)

Lamb Chopper is a great-tasting cheese. I’ve used it a few times on a grilled cheese for something different. It was always popular for people with lactose issues.

I love sheep milk cheeses (except Manchego), but I’ve always been disappointed by Lamb Chopper in the past.
Today, I found a forgotten wedge in the back of my cheese drawer, and I just now had a piece of it. It is a completely different cheese than the younger, newly purchased ones that I’ve tried in the past. It got a deep, sweet, caramelly and distinctly nutty complexity, and the texture is vastly improved as well. It also had the hugest crunchy crystals in it that I’ve ever experienced. Tomorrow, I’m planning to use it in combination with some Jarlsberg in a grilled cheese sandwich.
