Really nice composition but tbh it gets a bit lost on the white plate. What do you think about a darker plate?

How is the fish cooked? Poached. Wrapped in seaweed. Just want to know what it taste is.
Like butter and salty, ocean and sweet. Is the mosaic prepared as a loaf/ roll and sliced?
