  1. I see what you did there. Suggestion is – put a cracked claw on top in the center and maybe shave some truffles over it with a bit of fresh majoram.

    I like the presentation. The choice of plate implies elegance which your flavors would deliver. The use of the mustard seed (pickled, I assume) should add a nice contrast to the richness of your ravioli. A great example of less is more concerning your portion and distribution of the mushrooms and seeds. Well done chef.
