  1. My first thought was “interesting dish, but I love Brioche”, my second thought was “raw yolk not good…”. I get where ur going but personal preference of mine on raw eggs.

    What are the white shavings? Also the greens underneath (not the oregano)? It looks like two sauces, white and yellowish?

    I like the shaved mushroom garnish. Good texture, nice touch.

    I might’ve set the yolk slightly. But I like what you’ve done.

    Edit: now that I’m being fastidious, I need you to go ahead and get the little white umbilical off that yolk. 😉

  5. It’s beautiful, the plating is perfect, but I just can’t bring myself to eat a raw yolk…that’s a me problem though, not a you problem.
