I saw this salad on [TikTok](https://www.tiktok.com/@violet.cooks/video/6996455275834117382) and have been hooked on it since. But, it kept coming out to about 600-800 calories, so I wanted to make a 1200 Cal diet friendly version. Finally struck the right balance of ingredients! The actual recipe is on the creator’s [Instagram](https://www.instagram.com/violetwitchel/?hl=en), but I’ll write it out the measurements I use for 1 serving:
* 5 grams minced garlic
* 20 mL lemon juice
* 10 grams olive oil
* Salt & pepper
**Instructions**
1. Mix all the dressing ingredients together
2. Chop the kale and add the dressing. Massage the kale for 2 min.
3. Chop the strawberries & peaches and add them to the kale.
4. Add the almonds & goat cheese.
5. Grill the chicken, chop & add.
6. Toss together & enjoy!

Such a great recipe, thank you!
I have difficulties digesting such fibrous foods such as kale. Can you recommend a suitable alternative, please? 🙂
