Bleu de Basques (anybody use blue cheese for cheese on toast like me?)
As a lover of roquefort, this cheese seems mild for me (I prefer strong cheeses like aged cheddar and cabrales) but it still has that blueness and has the sweet and nutty taste of sheep chees in the region. Highly recommend
