    Finishing off a week of consistent tracking! Logging and sharing my meals has really helped keep me on track, thank you everyone for the support! I’ll still post occasionally but while I intend to keep tracking every calorie, taking the photos to share every day is getting old! Anyway here a delicious day of 1502 plant-based calories:

    Breakfast – hash of Brussels sprouts, sweet potato and leftover TVP taco meat with scrambled tofu and spinach, toast with plant butter, and espresso

    Lunch – salad with spring greens, leftover bean/rice/corn dish, avocado, choloula coated seitan, and topped with a mix of vegan sour cream and taco sauce

    Snack – banana and strawberries

    Dinner – lettuce cup filled with a stir fry of quinoa, carrots, red onion, peppers, mushrooms and b beefless bulgogi

    Bonus – High Noon

    This looks amazing, I now have food goals to make my meals look prettier. I’ve gotta try that alcohol, I’m struggling to fit any into my calories on the weekend which is a bummer.
