    This would be great in a dining room space like an abandoned warehouse or old mechanics garage.

    Thinking like art show opening in a former industrial park.

  3. I think the black sauce may look better underneath the items as a contrasting background. On top it looks messy IMO, akin to an oil spill.

    The color of the quenelle isn’t for me, but the white background of the plate is making it worse. I think against a darker plate, or with the sauce underneath, would make this pop in a better way.

  7. The name reminds me of René Redzepi on (I think) Mind of a Chef, joking about the silliness of how 15 years ago the dish he created would have been called a “symphony of vegetables”

    To clarify, I know you’re talking about opera cake, just making a joke…

  9. I feel like this would look a lot better on a different color plate. Against the white it just looks like a construction area.
    Perhaps Do a straight swoop (spoon scrape) with the oil, 8-2 , big piece rectangle 11-3, center slightly up, quenelle center, crumbs garnished on same but evenly.

  10. I’d like to see a non manipulated photo of this. This clearly has had contrast turned up at the minimum.

    I’d try splashing/flicking the sauce on the plate to give it that artistic mess look. But otherwise I love the colour palate and think it looks awesome.
