

Ingredients:
3 8oz boneless skinless chicken breasts
1 roasted red bell pepper, diced
1oz fresh baby spinach
0.5c shredded mozzarella cheese
1Tbsp olive oil
1tsp thyme
1tsp basil
Salt & pepper to taste
Directions:
1. Preheat oven to 350F
2. Make a deep cut along the side of each chicken breast to create a pocket. Be careful not to cut all the way through.
3. Stuff each chicken breast with equal amounts of roasted red peppers, spinach, and mozzarella cheese.
4. In a small bowl, mix olive oil & seasonings. Brush over outsides of the chicken breasts.
5. Bake for 25-30 minutes, or until the chicken is cooked through.
