    serious question: why is it so often seen here that half the plate remains empty or at least significant areas remain unused, while the food is also not infrequently served in a decentralized manner?
    is there a practical reason for this, namely that the space remains free for loading your cutlery and composing the components to one bite? only, that would actually be unnecessary with the tiny portions.
    what also surprises me is that this phenomenon has not yet been criticized or questioned by anyone, so i assume that there is a sensible reason for it, which just doesn’t make sense to me.
    can someone explain?

    The dish itself looks excellent! While I appreciate the use of negative space, I think you could size the plate down and still achieve the desired look.

  3. Really pretty, but a lot of negative space. A smaller plate would still have the effect.

  4. I would smooth out that avocado. The chunky-ness ( of the paste? Sauce? I’m not sure what it’s trying to be ) is somewhat unappetizing.

    Tighten everything up a touch. A smaller plate of the same color. Pumpernickel is interesting choice with wasabi. Reminds me of bagels and lox with horseradish or mustard seed. Cool idea.

  6. If I received this, I would want to know who got the meal from which I was getting the leftovers, so I could ask them how the actual plate of food was lol

    What is one supposed to do with all that extra plate space?? It’s not like there’s enough ON the plate to need room for additional sauces or anything… we literally have 2 bites of salmon and 3 piles of breadcrumbs….

    I’m sure it’s delicious, but is this supposed to be a 1 person appetizer or what? Certainly not an entree. I’d even be irritated to have this as an app tbh…

    Edit: also, it looks like a sad face on the plate, so at least we got the mood right…. 😂

  7. This makes me hungry. Not as in, it looks delicious (it does). But, the negative space makes me wish I had more food. Beautiful plating; put it on a smaller canvas and this is wonderful!

Flavours could work but needs work on plating, could you try three pieces of salmon if not smaller, odd numbers are more pleasing to the eye, pumpernickel might work better as a crisp & it would add more hight to the plate, you avocado looks rough for the refined minimalistic look your going for, could you just turn it into a purée with the wasabi, Drop the cress. Add some radish or something with a contrasting colour

    That looks wonderful! I know a lot of people are complaining about the empty space on the plate but I think when you pair small portions with a 5 five course meal whoever is enjoying ops delicious food will surely appreciate not feeling like an anchor in the sea lol after eating whats been normalized for so long.

    2/10. I can tell you really tried. It’s missing a whole lot. There’s a lot that you would want on that plate. For the fact that it’s salmon, one of the cheapest seafood that portion is laughable. Then there’s a huge dollop of other stuff on an already meager portion which will pretty much crowd out the salmon. The arrangement of additional garnish looks more like the start to a compost pile than an accompaniment to a nice dish. Since it’s smoked salmon I would have gone with thinner slices laid on top of each other in the shape of a fillet. The pumpernickel I would have put in one lump on a piece like an eye and the rest layered beneath like waves.
