    This is lovely, but watch out for smears on your plate (10 o’clock, behind the jutting-out microgreen).

    Best way to avoid that is a tightly rolled up napkin soaked in vodka. It’ll wipe the plate perfectly clean, and evaporate before getting to the diner, without leaving an aroma like vinegar will.
