  1. looks amazing! for some reason the bean/blood mass underneath looks a little too large-portioned for the plate, but it could also be perspective/verticality. Can you try to make that central stack tighter and higher, allowing more negative space with the crema and also making it taller? Would love to see that iteration and compare!
