this is really pretty but im not sure how much i’d enjoy that many edible flowers in one dish

I wouldn’t serve that many flowers, that’s a lot. Your chocolate needs a little refining, try shaping it in to a silicone half sphere and then briefly putting it in to the freezer so that it holds a smooth shape. Thr cookie can come out from under it, and be broken into places around the half sphere of mousse, and the cremeaux plated woth the cookie. I find flowers left whole to be quite large and they take the focus off ofvthe rest of the dish, try removing the petals and using individual petals instead. It sounds like a nice idea, but it could use a little refining. Keep it up!

Valentine’s Day is the only occasion when such overuse of edible flowers is acceptable imo, but remove pistils from them😉 the tuille looks very well executed. Also why not showcase your cremeux and mousse separately?

I’m not against flowers necessarily. Plenty of them actually have a flavor and can be used as an actual part of the dish. But this… this is *a lot*.
