I like everything about this except the color of the tofu puree.
It’s a fun composition, but incredibly flat colors on the salmon. Turmeric wouldn’t be wildly out of profile here, and coloring that puree would help immensely.

I love it all, except I think I’d use a different plate/colored plate/maybe shaped plate, too.

Like others said salmon needs a spot or three of greens or something for color.
