    Details:

    -black truffle pappardelle
    -Caraway and tarragon cream with veal demi
    – bruleed borsin
    -oyster and maiitake mushrooms
    – sous vide egg yolk
    -Upper choice tenderloin
    – corn shoots and bull’s blood

  2. The sprouts are definitely out of place, but I like where this is going. If you want some visual flair, add something that is both visually interesting and fits the dish. I’m thinking a crispy miatake nest for that lovey yolk to sit upon. Garnish the yolk with nigella seed and sel gris.

    The drowning in sprouts isn’t my favorite thing. I like the corn shoots, maybe a little bulls blood, but no need to add the grass.

    Everything else is fantastic. I want.

  5. Just to add to the decadent-ness…a stroganoff risotto would be delicious to incorporate all of these elements. Beautiful dish. I wonder what an arugula purée/oil drizzled around instead of the greens would do. Outside of my thoughts…this looks fantastic.

  6. If I’m honest, it looks pretty and I think it will taste amazing. It’s just most definitely not a strogonoff. 🤷🏻‍♀️
