I think your plate has a beautiful presentation! The colours all work so well together, accentuated with the contrast of the white daikon roll 👌 very nice. I also think that the addition of the flowers gives it a perfect lil finishing touch on top of the trout roe, even if it’s purely for aesthetics.
As much as i like the presentation, there are certain things that bug me a bit. Just as a general rule (well, idk if it’s known) you should present the elements of your plate in impair numbers, it adds a certain harmonious composition to a plate and helps guide the attention of the customer. I would have presented either one or three piece/s of the roll. Presenting one would look like a part in an 8 course meal at a high end restaurant, while presenting three could pass by an appetizer/ possible main dish? at a high end bistro.
And a tiny nitpick, i think the flowers shouldn’t be in the sauce, they get lost in the sauce. It feels like the flowers kinda fell there by accident. A clean bed of sauce would make the whole plate look a lot more elegant, it looks clean. It would also put focus on the main element of the dish: the beautiful composition of the roll.
Ofc, this is my opinion. When i saw this plate it pushed me to write this whole analysis because i consider it to be a near perfect presented dish. I’m very impressed, please continue to do what you do.
